Puddings for the freezer - any ideas...

LO is due in a few weeks and i have been advised to stock up my freezer with easy access foods.

I can think of lots of supper time meals - chilli/casseroles/ big batch of sauce to defrost and pour over pasta for lunch etc etc but i am stuck for pudding ideas.

I have found a recipe for a chocolate cake that can be frozen but i was wondering if anyone could help me please.

Alternatively, what simple puddings can be made.

You may find once lo arrives you barely have time for dinner let alone pudding

I think you can freeze most things, fruit pies, miranges (sp)

Chocolate brownies? Warmed with ice cream, yum.

In fact, just fill the freezer with ice cream and the cupboard with chocolate and you should be sorted.

Do you have other children? a quick pudding most kids love is, slightly warmed jam tarts with custard, yum.

TBH it didn't occur to me to do puddings when I was filling the freezer pre birth. But sponge/sandwich cakes freeze and you could use these as puddings. You could make fruit cakes to freeze or if they are rich enough they would keep. Crumbles freeze, apple pies etc.

Crumble mix or pastry could also be frozen on their own.

I'm with you Tea, the pudding was the best bit when I was just home with dd.
I stocked up on instant custard (boil the kettle, add water to powder, stir and pour over shop bought ginger cake - YUM!), instant semolina (just boil kettle again), tinned rice pud (often eaten cold straight out of tin).
I also kept stewed fruit (apples, plums etc)in freezer, just defrost and serve warmed with either custard or creamy yoghurt.
My biggest luxury was getting visitors to bring a pudding if they were around over a meal time (planned of course) and was indulged with home made rice pud (ate the lot, no one else even got a spoonful)also choc brownies & icecream.

How do you make crumble mix?

Crumble Mix
50g/2oz butter or block marg
100g/4oz plain flour
50g/2oz sugar

Rub butter/marg and flour together until mixture resembles fine breadcrumbs, then stir in sugar.

Freeze or use straight away by spooning over fruit (about 450g/1 lb) and press down lightly.

Variations - add 5ml/1 tsp of cinnamon or ginger to flour before rubbing into butter/marg OR grate rind of orange/lemon into mixture at same time as adding sugar.

Also can stir in some porridge oats if wanted to make it more flapjacky.
