Hello - my plan is to eat more vegetarian food and less meat next year and I’d really appreciate any sharing of easy-ish, healthy vegetarian recipes - links to recipes online or your own descriptions would be great.

I love making my own sausage rolls with Richmond meat free and just roll puff pastry. Delicious

@AnneLovesGilbert we have almost exactly the same taste in recipes. Loads of my favourites on your list.

I’ll add this burnt aubergine chilli. It takes a long time on the stove but there’s very little work involved. It’s also very easy to make a huge batch of and freeze.

I should say, if you do make the chilli, add much less soy sauce (I only use about half a tablespoon). I like more chilli powder/flakes too.

I’m sure some of them I got from you Purple, the beetroot was definitely. It’s become a regular staple and people always want the recipe. I squidge some soft goats cheese on top if I’m feeling a bit fancy. Thank you!

I finally found a decent vegan Christmas main for my potato and pastry hating mother so I don’t have to go NC after all Grin

Do you have the egg curry? I tried it recently, highly cynical I was, but I loved it.

I like the simplicity of the timnedtomatoes recipe.
I use frozen spinach, and you have to add garlic. I use granules and use at least a tsp. You cannot have daal without garlic. It’s illegal.

I haven’t tried that particular one but potato, cauliflower and eggs are three of the best things to put in a curry-I can definitely see that working.

What did you go for in the end? No pastry no potato vegan is hard!

Chilli, Garlic, courgette & Parmesan linguine.

Not healthy but so delicious.

For 2 people - slice 3 med courgettes as finely as you can. Fry in batches with olive oil, chopped garlic & chilli (for us, three big cloves & 1 red chilli with seeds - we like a lot of flavour) until they're brown & curling up with a big pinch of salt & pepper.

Stir in cooked linguine (100 g per person - we're greedy) and two big handfuls of Parmesan.

So bloody good. So, so good. Had it this evening - one of our favourites (and we aren't full time vegetarians).

Guacamole peppers, roast halved peppers for half an hour with some chopped up cherry tomatoes garlic and olive oil in them, top with Guacamole (avocado, lime, coriander etc) and some cheddar then back in oven for 15 m. Gorgeous with rice and sour cream.

I went with the vegan nut roast I linked to above in the end. I tried several different recipes and that’s the one with enough structural integrity to handle slicing without crumbling. It’s really excellent, easy, quick, no weird ingredients. I’ll make it regularly. It’s got a very savoury taste, I used posh soy in it which gave it a rich marmitey loveliness.

I’d never used egg in curry before but that recipe is brilliant and another firm favourite.

DH loathes aubergine but I’ve been eyeing up that chilli for ages so might batch cook it for myself.

@AnneLovesGilbert it doesn’t really taste of aubergine, it’s more a general smoky deliciousness. I love chilli and that one is good enough and easy enough to get made regularly. I’ll give your nut roast a go next time I’m making one. This year ours is from lidl! Just want an easy Christmas.

I made a really great curry today after being tempted by the recipe in today’s i newspaper. Tofu and maple roast cauliflower korma. It was properly delicious if you’re a fan of an on-the-sweet-side curry which I’m normally not. This one has converted me. We both scored it 9.5/10. A little bit of a faff but worth it. Didn’t feed 6 though! You need a blender for the almonds, and I’d add sone of the water to get them smooth. I cooked the tofu in a pan coated with plain flour so it was more crunchy than roasting, added leeks fried in butter instead of spring onions (didn’t have any) and toasted flaked almonds on top. Eggs would be a good addition. I’d simmer the sauce for longer or use less water. Here’s the recipe.

That sounds amazing @PurpleDaisies, thank you. Everything is better with leeks. I’m doing leeks with chestnuts for Christmas as no one likes sprouts!

Keen to hear about the Lidl roast. I was giving up on making one as all the recipes sucked so tried the individual ones but I’ve lost my tolerance for too much spice and it nearly blew my head off. Also not mad on cranberries in savoury food but you can add them to the one I linked to.

Someone posted a mushroom pate recipe here the other day so I’m doing vegan canapés with that and homemade hummus.
