How do I stop my roast potatoes from sticking?

Hi, as the above says, my roast potatoes always stick!
Doesn’t matter if I do them in oil or fat. Any tips?

Heat the tin you are cooking them in then add the fat and return to the oven to heat the fat. Put the hot tin of fat on the hob on the heat when you add the potatoes. Put in oven. Turn half way through cooking time.

When you first put them in the pan do you give it a wiggle to make sure they are coated all over in oil? (Plus as above, turn midway.)

The trick is never to put the flat side down in the fat first, always roast them flat side up (flat side being the side where you've cut in half) if you do that no matter if you put them in hot or cold, fat, oil or anything else they will never stick.

Coat all-over with very hot oil/fat, but leave flat-side up as above.

If you parboil them, make sure they are absolutely dry before adding them to the hot fat. I drain mine, then leave them to steam for a few minutes before shaking (to get the rough edges) and putting into the fat.

Exactly. Yum. DH does amazing roast potatoes like this, all sticky and golden.

For me, leaving them long enough before trying to turn them is the issue. Trying to turn turn too soon means they are stuck but waiting a bit longer means they’re fine.

Part boil the potatoes and then soak in cold water, you want the potatoes cold, then add them to a hot pan with plenty of hot oil in it. It will spit a bit, but get them covered nicely. No stick and nice crispy roast potatoes

Oil and roasting tray as hot as possible, parboil the potatoes and do something to roughen the outside I "shoogle" them in a colander before tossing in the very hot oil and pan mine never stick but they're always crispy on outside fluffy on inside

I put foil in the roasting tin (even though it's non- stick) which seems to help.

Rinse the prepared potatoes thoroughly in cold water before you parboil them. Some varieties of potato have a lot more starch than others, which has a tendency to make them stick.

This! Same with potato wedges etc. Whack em in, close the oven door, and leave them be for at least half an hour before you try and turn/shake them.

Yes! Best tip I ever got was to start roasting them cut side up otherwise they will stick, mine never have since I started doing this
