Its coming up to dinner ....... its time for mosschops useless food question of the day (fish pie)

Ok a couple of things, I am making fish pie tonight for the first time.

Now how do I poach cod in milk?

Secondly I am using cooked prawns and tinned salmon too, so would you cook the cod, then add the salmon and prawns and just heat up under the grill (thereby not re-cooking the salmon and prawns) and just browning?

TIA you'll miss my questions when I become a demon cook, you know you will

Put cod in saucepan - cover with milk (or milk and water) simmer for about 15 mins (depending on thickness of cod) till cod is piping hot throughout.

I would poach cod, put into a casserole dish, chuck in prawns and tinned salmon, pour over a cheese sauce (maybe a chopped hardboiled egg too), top with mashed potato and pop in the over for about 20 mins till browned on top and bubbling.

CatIsSleepy · 22/10/2007 15:48

how are you making the fish pie?
I would mix all the cooked fish (including tinned) with some kind of tasty white sauce + top with mash, then cook in the oven for 30-40 mins

to poach the cod just add milk to the fish in a saucepan-enough to about cover it, bring to boil and simmer quite gently

time needed will depend on thickness of fish
10 mins-ish onwards

you can then use the milk to make your white sauce

HTH!

Just cover the cod in milk and gently simmer. The cod should start to flake when ready. I would add the prawns and salmon to the drained cod, cover with mash and cheese and bake for 20 minutes or until browned.

Hope that helps

CatIsSleepy · 22/10/2007 15:49

yeah, and what jumpyjan said too

sparkybabe · 22/10/2007 15:49

don't forget to skin the cod first.

CatIsSleepy · 22/10/2007 15:50

ooh am a bit over the top with my cooking time for the pie it seems
long enough to brown the mash a bit anyway!

mishymoo · 22/10/2007 15:50

oops forgot the white/cheese sauce

witchandchips · 22/10/2007 15:54

Jamie oliver has a recipie that just uses cream. Much easier as don't have to faff with white sauce etc.
see here

mosschops30 · 22/10/2007 15:56

will the already cooked prawns and salmon go nasty being cooked again though?

ok so I have to take the skin off the cod, will it fall apart when its poaching? Do I pour cold milk over the cod and then bring it to the boil and then let it simmer?

OP posts:
mosschops30 · 22/10/2007 15:57

I have white sauce, no cream

put boiled eggs in with the fish- makes it delish..

witchandchips · 22/10/2007 15:59

best way to poach fish is to bring it up to the boil slowly in liquid and then take it off the heat . Leave the fish to cook in hot water for 8 mins or so

sparkybabe · 22/10/2007 16:04

then use the hot poaching milk to make a white sauce. The prawns and salmon are jsut to be heated through, they are not 'cooked' again. After all the cod will also be cooked by then and so is the potato.

jumpyjan · 22/10/2007 16:07

salmon and prawns will be fine - they will just be heated through again.

pour cold milk over fish then bring up to simmer. don't worry about taking skin off - once fish is poached flake it and skin will jsut come off.

mosschops30 · 22/10/2007 16:09

No good with pork i'm afraid!

mosschops30 · 22/10/2007 16:17

I do have eggs actually, do I mash em up with the fish?

OP posts:
sparkybabe · 22/10/2007 16:32

I would just slice up the hard-boiled aggs on top of the fish (or not, if you don't want to, my kids wouldn't eat them)
I have a great recipe for a pork joint for tomorrow!!!!!!

clumsymum · 22/10/2007 16:35
