Garlic what to do with it.

I have just got a large veg box from our local butcher (yes I know it's odd) but it come with 2 large bulbs of garlic and although we do eat it the amount we have we wouldn't use it before it will go bad.

How can I store it to keep it fresh.

I wouldn’t be able to resist making chicken with 40 cloves of garlic. I know it’s retro but it is gorgeous. It is is really mellow and not pungent at all.

Roasted veg, roast 25 mins, then add loads of garlic for final 25 mins.
We use about half a large head garlic.
Garlic does keep in the fridge.

Another idea is to make garlic butter.

You can keep it in the freezer and just add a slice to steak, fish or veg as and when you need it.

This uses a fair amount of garlic. I never make it with broccoli but substitute in whatever veg I have (peppers, courgette, carrots.... all work!)

I think the trouble is we like garlic but we don't like a lot of garlic.

So I may only use 2 /3 cloves at a time a couple of times a month.

Just roast it whole and have it as an accompaniment to a Sunday roast or with grilled/pan fried meats eg steak or lamb chops. Or spread the roast garlic on bread or throw it in a salad, it's especially good in a warm salad of honey roast tomatoes with mozzarella or feta.

The taste is completely different when it's roasted, sweet and mellow, much milder than raw.

If you don't want to use it all in one go, you could chop it finely and freeze to add to dishes later.

Start making Indian curries. Plenty require half a dozen cloves of garlic or more, you'll get through it in no time.

Roast some and freeze it like IJumped says and then whizz some with a few drops of lemon juice and freeze that in some ice cube trays :)

That 40 cloves of garlic recipe - it' brings back memories. We did a very very similar version for years at university on a regular basis. Ours required adding yoghurt or cream to the sauces at the end if I recall, and maybe the addition of some stock? I can't quite remember. Obviously I now feel it MUST be made next week! Grin
