I went a little too far with this one time whilst living in Boulder and, in addition to the mince, shredded chicken and bean options, I also offered tofu marinated in mild salsa sauce and then cooked like mince as an option.

Went down a storm, though

You can make virgin margaritas... so you don't feel left out.. breakfast todays sounded exciting.. can't wait to hear what you have tomorrow..... mexican is VERY easy its all in the preperation. 17mo can help with the prep.. cooking will come later anyway, dips you can get at tescos if no time to make and tortillas, even corn as they are preferable in my eyes. as a chef I would say its one of the easiest evening meals I do when in a rush with few mates round.
I'm sure you will have a great night...
You could always do a murder mystery eve.. now they are fun....

I would usually do Indian if veggie is required, but agree with expat, often do mexican as it is so flexible.

Could have poppadums, chiapattis, naan bread.

Then different dishes.

I have done in the past, veggie soup, carrot and corridaner, or carrot and leek.
( made in advance) home made bread rolls.

veggie lasange with salad , peas or in winter roast potatos ( I do wack in a lot of calories)

double choc ripple cheesecake.

I make lasange in advance and freeze it.
the soup night before/and cheesecake, bread rolls in morning.

This was a lot of work in the end, but feeding 20 is!!

This christmas I am cooking christmas dinner for 17. am not looking forward to it.

I'd prob do a curry evening - chicken korma, prawn-slightly-hotter, chickpea curry, dhall,(lentils) potato-and-spinach aloo dish, maybe a beef curry and a veg one too. Then lots of plain veg side dishes, salads, rice/naans/poppadums/parathas. Follow with fruit and ice cream or sorbets.
