I’m looking for a tasty, prep ahead sausage meat stuffing recipe for Christmas day. Does anyone have any good suggestions please?

I always used to use Marg Berry’s which was fine, but last year found this recipe and will definitely be using it again this year realfood.tesco.com/recipes/sage-and-onion-stuffing.html

This isn't actually a recipe, but always worked for me.
To a pound of pork sausage meat (in a large bowl) add a fried diced onion, two or three chopped cloves of garlic, then stir in about half a small packet of Paxo stuffing mix and a well beaten egg. Combine well together with a fork or your hands.
Leave to stand for a couple of hours, if it seems a bit wet, add more of the stuffing mix.
You can add other flavours, such as chopped leeks, grated apple, chopped prunes, chopped dried apricots, dried cranberries.
Then leave to stand overnight until required. It can be used to stuff the cavity of the bird, or to make balls to cook separately.
If you stuff the bird with it, remember to add the weight of the sausage meat into your total calculation for the cooking time.

I usually do a variation of Jamie Oliver's. I can't find the exact recipe online, it's from a DVD I got from BHS years ago.

I don't know how this version compares to his original recipe as I do it from memory now.
Slowly cook red onions, sage, rosemary, thyme, chopped streaky bacon and vacuum packed chestnuts in a big frying pan with olive oil and butter, cook for about 20-30 mins.
It smells delicious, I have to do extra because everyone steals spoonfuls of it!
Leave the mixture to cool then add it to sausage meat and breadcrumbs, I tend to use minced pork now rather than sausage meat in which case I add salt pepper and plenty of grated nutmeg. Previously I've added things like leeks in at the begging with the onion mixture, dried cranberries and orange or lemon zest too.

Ours is always a bit of a make it up as you go along..... base - pack of sausages ( Morrisons Old English ones work well), bread crumbs (enough to soak up the fat but not too much as it will be dry), fried onion to add sweetness - 1 large / 2 small, an egg or 2 to bind, plenty of salt and pepper.... then add in the flavour. Chestnut and thyme, sage, orange & thyme, apricot & almond and Middle Eastern / North African styleee spices, or anywhere your imagination takes you. I love stuffing so it is not just for Christmas.

I do a version of the Jamie Oliver one as well.

I don't actually weigh anything as I take a more being it all together and mix it up approach. Grin

It generally consists of:

Quite a lot of sausage meat
Fried onion
Cut up streaky bacon
Some breadcrumbs
An egg
Chopped up dried apricots
Chopped up vacuum packed chestnuts

It's absolutely delicious. I've made several smaller portions to give to various relatives this year as we won't be meeting up all together. It freezes well so you can prepare in advance.
