German Christmas biscuit recipes please!!

I was born in Germany and although we moved to England when I was still little I've continued with the German biscuit tradition my mum got me started with! Every Christmas I make cinnamon stars, walnut hearts, gingerbread, lemon biscuits, rum biscuits and shortbread. This year I'm putting my foot down about the shortbread!! Nobody likes it and it ends up quietly moulderig in the tin until someone chucks it out in February. The question is, what can I make instead? I want to avoid recipes heavy in almond, walnut, cinnamon, raspberry jam, lemon, rum or ginger, as those are the predominant flavours I already have. Any obvious German biscuits I'm overlooking? Or less obvious ones? I really don't like nuts (unless ground right down, as with the cinnamon stars and walnut hearts) so things like Florentines are a no-no. And I don't like orange, which is a shame as that's an obvious one for Christmas. I love chocolate though!

I'd really like to have an excuse to use my Christmas cutters. I do use them for the gingerbread but that spreads out of all recognition so a recipe where they keep their shape would be ace!

I second Vanilla Kipfel but how about Pfeffernusse. Easier to make as the shaping is so much easier.

Thanks so much everyone!! I have decided on Vanillekipferl and Pfeffernusse! I also saw this recipe which sounds nice:

The recipe for the Pfeffernusse doesn't seem to have nuts in it? I might use another that does, to be authentic, but I was wondering about using hazelnuts for a change - has anyone tried that? Does it work?

I'm biting off way more than I can chew, I'll never have time for all these! I've decided to make fewer of everything this year, but have more variety. There's no real need to bake a much as usual as my brother and his wife will only be down for a couple of days instead of a week. I'll let you guys know how they turn out!
