I want to make muffins. I want to substitute the bananas in the below recipe for tinned oranges. Is it possible?

Banana Loaf Cake

I have made the above banana loaf on several occasions, and it is really yummy. But I dont have more than one over ripe banana! Thinking I could do a banana orange rasperry muffin instead. You reckon it would work?

Once you have the basic muffin mixure you can add any fruit. Just adapt the cooking time.

This is strictly speaking no muffin recipe, it is for banana loaf, you think it will work?

And how long cooking time, seing as I am using a "shaped muffin baking tray"?

You can tell I am a baking novice.

do you wanna make muffins or a cake though?

a muffin is different

sounds totally foul btw tinned oranges in a muffin? can't see it working but try

9-11 oz sr flour
4-6 oz sugar
1/2 tsp salt

and mix

then 1 egg, chopped oranges (you sure?), prob 5fl oz milk and tsp vanilla

and mix

then mix wet into dry until just mixed and bake at 180 for 20 mins (to 25 mins)

personally I wouldn't do it .. or would consider adding mixed spice to the dry ingredients (say 1.5 tsps?) so you have orange spicy muffins .. and maybe 3 oz raisins

banana muffins however are yummy .. but again wouldn't make them like the loaf cake cos a cake is heavier than a muffin

I am just realizing I must have left my newly purchased muffin tray at the hairdressers on friday, as it is not in the car and not in the house.

This means I will have to make a loaf.
Or wait till I retrieve my tray. How sad am I?

I guess it could be banana and raspberry loaf?

Butter unless it is melted doesn't really go well in muffins as it makes them too heavy, which is why it is better in cakes iyswim. TBH I don't think that it will work well with oranges. I think that you would be better off making a cake.
I'll have a look for a recipe, or else just make raspberry muffins.

easiest way to make fruity muffins is to use Twigs recipe but substitute orange juice for the milk, so

9-11oz self-raising
4-6oz sugar
pinch salt
6oz or so of any old frozen fruit (blueberries work well)

3floz oil
5floz orange juice
1 egg
orange zest

Was inspired by a muffin-type choc cake recipe posted ages ago by Enid where you use cold coffee (will be trying that with walnuts too)

if one made peanut butter muffins, would one add it to the wet or they dry, iyswim?

I would loosen up the peanut butter with the wet ingredients. Sounds nice.

Muffin tray retrieved, my AP had been tidying, and put it in my drawer with towels and tea towels, as it seemed the most logical place... pmsl

Will follow MRS Badgers recipe, and have bananas, blueberries and rasperries!
