Good slow cooker recipes - need five per week as too busy to cook in evenings....

Anyone? I have more time and energy in the mornings and with all the kids things in the evening I think the only solution is lots of slow cooked meals...

Does anyone have the Anthony Worrall Thompson Slow Cooker Recipe for rice pudding. I lost my recipe book and can't remember the recipe any longer. Its the best one I've tried. I've trawled the net trying to find it, but no luck. Thanks

Ooh, anchovies, your kleftiko recipe is gorgeous! I bought a slow cooker and made this yesterday, bloody lovely.

I made a chilli today and it was brilliant to come home after work and tea was ready.

Are you ablke to do double batches and cook only half the times? Or is your family too big?

I have just thrown together the following for tomorrows busy day:

Pork shoulder joints
2 tins chick peas
2 tins tomatos
what ever random veg in the fridge...: carrots, sweet potatos and onions in this one

I usaully choose from the following to add saucey/favour:

  • Chopped ginger and chilly [can be made milder]
  • Garlic paste, tomato paste and bit of pesto
  • Bacon, tomato, herbs
  • Curry pasta [morrisons do a coriander and lime one that you only need a spoonful of]
  • Tin of baked beans and some herbs
  • Honey and ginger

Also, I like doing stuff in slow cooker that will go with other stuff so if you need lots you only need half of the slow cooked stuff.

Beef in red wine: Beef skirt or other cheap cut, non alcoholic wine is mega cheap [I use half a bottle of Morrisons non- alcoholic wine which is about £2.50 bottle - this lasts a long time] If you only do beef and maybe few pulses you can bung some spuds in microwave, or put it with pasta. Also I experiemtned and found I could steam veg above the meat for 15 mins when I got in from work.

Whole chicken works well. The meat [cliche alert] falls of the bone and you can dish out to everyone perhaps as a hot meat sandwich, with pasta, rice, spuds etc.

I can recommend the Katie Bishop book (£5 on amazon) which has some great recipes for chucking raw stuff in, in the morning and coming home to find your tea is ready.

It does have some randoms in there (don't understand why you would want to make yoghurt in your slow cooker when the main ingredient in the recipe is yoghurt but everyone to their own!).

What about batch cooking and freezing individual meals too?

Chicken pie works.
chilli
fish pie (hold the potato topping or make and freeze seperately).

I got to be honest you'll get sick of slow cooked beef, stews etc the idea is great but it doesnt do it for me.
