Vegetable fritters

Hello!

Does anyone have a reliable recipe for fritters, preferably baked rather than fried? Ideally something like carrot, courgette and feta (I have all these in right now).

I've tried a few and often end up with a soggy mess (especially when I fry them). The most sucess I've had is with an old Delia recipe but that has potato and I don't want to use potato. I think it's the binding ingredients I get a bit wrong.

I use a Riverford recipe for carrot fritters but they are fried. Anna Jones has a recipe for 'full of greens' fitters that are good

I think the key is to make a really thick batter. So much that it almost clumps up in the whisk. The veggies release a lot of water so if your batter is too thin it will splodge!

I'd de-seed the courgette, that's where most of the water is.
Split in half lengthwise, then use a teaspoon.

These courgette, pea and feta fritters are nice. I use a mouli to shred the courgette, sprinkle with a little salt leave for a while, then wring out as much of the liquid as possible in a clean tea towel.

I think you really have to fry them to get them properly crispy. That’s certainly my experience.

These courgette and sweetcorn fritters are regulars on the meal plan here...

I've never succeeded with baking them.

Sweetcorn, red oniin, red chilli, spices, egg, flour

Courgette, feta, onion, red chilli, egg, flour

Once you work out your preferred egg/ flour ratio, it's then easy to play around with

I am more successful with recipes with gram flour. Plus it adds protein.

Speaking of gram flour, these are baked, but need quite a bit more oil than the recipe states.

Thanks @RemusLupinsBiggestGroupie ... I'll try those next time I do an Indian meal ...

I will try some of these ideas out. The idea of them is always better than the reality somehow.
