Can you recommend an easy delicious Christmas pudding?

Rather than the usual Christmas pud, cake, rocky road and trifle, I'm looking to find a yummy easy pudding from the wise ones on MN? Something that isn't too difficult as I'm not that patient in the kitchen Confused

Do you like lemon cheesecake/mousse/posset?

Smashed up ginger biscuit and melted butter base. Then mix together 300ml double cream, 1 tin condensed milk and the zest and juice of 2 lemons.

It will be setting before you pour it out the owl onto the biscuits but chill in the fridge for a couple of hours to make sure.

Chocolate ripple cake is nice and easy and looks impressive. Any chocolate biscuits will do and you can always make it boozy by adding to favourite tipple to the cream or biscuits. www.taste.com.au/recipes/choc-ripple-cake/ec490c9f-2a0e-40ea-b741-0606d08a5947

I second the panettone bread and butter pudding. I am not a fan of b&b pudding but this is so light and delicious

@DaffodilsAndDandelions that sounds very appealing and fairly straightforward. Probably good to have something light and refreshing after the Christmas lunch. Thanks!

Thanks @Mominatrix - I'm not a lover of Pannetone or bread and butter pudding, but appreciate your response.

@adropnotabit - looks delicious, but thinking about it, something lighter might be a better idea.

I've never tried making a pavlova but one of the things I'd like about having a go is that if it doesn't work out you can break it up into chunks and make an Eton mess. Grin

Pear and almond frangipane flan is amazing, serve it with ice cream or whipped cream. Just as good cold, so if everyone is full it is great. A lovely choice if you don't want something chocolatey.

You don't need to make special pastry, just buy ready made puff pastry and do NOT blind bake it.

Loads of recipes online.

We made chocolate melt in the middle pots and Delia's homemade ginger ice-cream last Christmas! Wasnt sure how the kids would feel about ginger ice cream but they actually loved it and have asked for it again this year!

Thanks everyone. It's between the lemon cheese cake thingy @DaffodilsAndDandelions and the pavlova @GorgeousGoldies which really doesn't look too difficult and if I mess it up, I can do the Eton mess fall back @Gasp0deTheW0nderD0g.

The pavlova wreath looks delicious but making meringue can be fiddly. You could always buy a pre made large meringue and fill it though.
My cheesecake thing also works really well in a premise pastry case or on a premise sponge flan case. I've done them all depending on how much time and motivation I've had!
