we are having friends over for dinner tomorrow night
they don't eat meat, but will have fish
i always do the same sort of thing - salmon or seabass so any ideas welcomed

Fish with cannalini beans, parsley, cream and mustard (Nigel Slater number....) doesn't look the most attractive, but tastes yum....

Theres lots of recipes around for posh fish pies, which are good for entertaining because make ahead, unlike a lot of other nice fish things which are a bit too last minute IMO.

Bill Granger's fish burritos:

Strips of fish. Make paste in processor with cup olive oil, bunch coriander, 1 red chilli, 1 tsp cumin, 2 tsp paprika, zest 1 lime, s&p. Pour paste over fish and leave for 15 min.

Peel, deseed and slice (chunky slices) cucumber. Halve punnet cherry toms. Slice four spring onions. Chop bunch corainder. Mix all together with 1 tbsp lime juice, 1 red chilli, s&p, 1 tsp sugar.

Add 2 tbsp lime juice, s&p to mayo.

Warm tortillas, heat pan and fry fish in batches. Serve with some wedges of lime and some little gem leaves. Everyone helps themselves.

My other is Nigella's Keralan Fish Curry but don't have the recipe to hand.

Hello ruby -

My DH invented a fabulous recipe with tuna. Probably not easy to cook for more than say 4 people but it's really delicious.

Marinade tuna steaks in some soy sauce, sesame oil (proportions like a salad dressing I guess - about 3 soy to 1 sesame). Add in some chopped ginger, chilli and garlic and maybe a squeeze of lime juice. I think it's about 4 cloves, 4 tsp of that ready chopped ginger and 2 tsp of ready chopped chilli for 4 people.

Marinade for as long as you have - at least 20-30 mins but can sit for hours if you want. Pan fry or griddle - time depends on how raw you want it (I have to have it cooked through at mo as I'm pg, but it's delicious slightly rare inside).

We serve it with some simple stirfried veggies (e.g. carrots, peppers, broccoli, cherry toms) done in oyster sauce, and rice. you can make the rice look posh and dinner party-esque just by piling it into a teacup or glass and turning it out on to the plate in a big tower!

It's a bit last minute, as you have to do the veggies and tuna just before serving, but it is very quick at that stage. Rice can usually sit in a pan keeping warm for a while so you don't have to faff with that as well.

Holidaysqueen I make a similar marinade for tuna but add in a little Chinese 5 Spice powder as well.

Aaah... Fishy... Yum!
Make a basic tomato sauce (fry thinly sliced onions and crushed garlic, add tin of chopped tomatoes), a glass of dry white wine if you have it to hand. Add 1-2 tbsp each raisins and capers, season to taste. You can make it well in advance and just heat it at the last minute. When nearly ready to serve heat it up, add chunks of white fish (cod, haddock, hoki, pollack, whatever) and let the fish cook in the tomato sauce (it will take max 5 minutes at low heat). Serve with rice. YUM!
The added advantage is that it is healthy and low fat, so you can have a really nice dessert

My favourite posh fish thing is a hake or sea bass Sicilian thing from the Sophie Grigson fish book:

1 big fish or 1 smaller one per person, olive oil, fresh rosemary sprig, 2 garlic cloves, 8 anchovy fillets, 2 teaspoons finely chopped rosemary leaves, 30g slightly stale breadcrumbs, salt and pepper, lemon to serve. Pre-heat oven to 170C, gas 3. Brush oil inside fish and tuck sprig of rosemary inside. Lay fish in an oiled ovenproof dish. Heat 5 tablespoons of olive oil in a pan on low heat and add garlic and anchovies, cook until anchivies squidged down and garlic smelling tasty. Drizzle over fish, getting it into inside as well as on top. Add pepper, sprinkle over breadcrumbs and chopped rosemary. Bake for 30 mins if a big fish, slightly less if you're using smaller ones. Baste it if it's looking dry. Serve with lemon wedges and it looks pretty with a red pepper and ricket salad.

Miso Salmon (this is based on the Nobu Miso Black Cod recipe):

Marinate salmon in: white miso, mirin, sake, sugar, a touch of vegetable oil for anywhere between o/n to 2 days. Wipe off marinade and place under grill. Literally will take 10 mintues to cook.

Serve with marinated cucumber salad (strips of cucumber marinated with sesame oil, mirin, sugar, rice wine vinegar), rice, and seaweed salad.

Can also serve with nice stir-fry veg.
