Fluffy muffin

Just that, how do I get my muffins fluffy, please? I follow the recipes to the T and still end up with tasty but dense ones. So disheartening, I'm a decent cook but a rubbish baker, what am I doing wrong?
Have been making banana chocolate muffins by Nigella and although the finished product is wolfed down by the troops, I'm not happy with the abovementioned problem of 'density'.
Please help oh Sage ones Sad

I don't think that any banana muffins can be totally fluffy, they all red to be a little dense and if everyone likes them, I wouldn't worry Smile

yeah, banana muffins can be a bit burly...the main thing with muffins is not to over mix them, do not worry about the odd bit of flour lurking about

get all the wet ingredients together in a big bowl, and sieve over the dry, mix with a spatula in as few movements as you can, really gently scoop them into the tins and straight into the oven, don't leave them hanging about

I have not made muffins for ages....I might do some today.

Thank you! I probably over-mix, but remember from several cake-making attempts that visible lumps of flour stay that way to the bitter end.
Would love some moderately healthy and fruit/vegetable-laden recipes if anyone cares to share.

Thank you, shall have a peek. DC are convinced that if only I got over my need to stuff anything I get my paws on full of fruit/vegetables and omit half the sugar, I would be a grand baker.

I might be with your DC and Nary Berry on that one sorry. She suggests having full fat everything just less frequently Smile

OP you are definitely over mixing. You really don’t need to worry about making sure all the dry and wet ingredients are combined with muffins - in fact I think it’s better if they are not (I used to make them every day for a long time for B&B guests). I’d say you’d want to stir for about ten seconds - I’m not exaggerating! Be brave and give it a go with less mailing than you think you need and see how they turn out!

This is my favourite, foolproof muffin recipe. I used to make themblueberry as per the recipe but have also omitted the blueberries & nutmeg for lemon zest & raspberry. They are equally as good.

It always worked for me to make the batter the night before and then leave covered in the fridge overnight. All you have to do in the morning is put into cases and bake!

My favourite recipe is also a blueberry one, by Nigella. Always perfect.
