Dessert recipes suitable for diabetics - please share!

Hi, I have been dating a man for several months, he has type 2 diabetes. He loves desserts, sweets , puddings whatever you'd like to call them (which may well have contributed to his condition 😬).

I know he finds it really hard to resist the usual range of sweets and puddings - i'm trying to support him in this so I'd like to to make him some nice treats that are safe for diabetics, cos I bloody love him 😊
I don't have a lot of spare time so I'm reluctant to trawl the net for recipes that might not be that great.

Any tried and tested ideas will be most gratefully received 😊

I make it thicker (so less milk) and skip the saffron. It's nice warm or chilled.

Sorry forgot to say, it's still not sugar free, but the sweetness comes from dates rather than refined sugar. Not sure if that's ok.

If you’re not opposed to using sweeteners, Splenda and Canderel have lots of recipes on their websites.

I make this cake www.bbcgoodfood.com/recipes/classic-victoria-sandwich-recipe with a straight swap of 200g caster sugar with 200g xylitol in the sponge batter. The result is a beautifully light cake with some colour. I replace the jam with St Dalfour jam (naturally sweetened with grape juice) and give the buttercream a miss.

I had seen a lot of recipes that use dates etc as a a sugar substitute, but wasn't sure how nice they'd be. Apparently dates are a low GI food so pretty good for diabetics.

I'm not sure if gestational diabetes food rules are similar enough, but I discovered that cream was fine for diabetics (although, obviously, still bad for waistline/heart etc) but that a cream based treat was a good way to have a treat. So perhapps look at that?
