carrot cake not cooked all the way through - is it redeemable?

I used a loaf tin (not what recommended in recipe)and so the centre of cake is still pretty raw... unfortunately i did not notice till i cut the second slice.

Are there any tips for recovery or is it a failed cake

Sadly not, best thing to do is to cut around the edges, ie. cut the uncooked centre out and eat the coked edges.

bugger thought so... had visions of frying carrot cake batter patties - but it was a faint hope.

Ah ha! I've done this before. My only cake tins are loaf tins and all my cakes/breads and sometimes even muffins come out the same shape. Next time cook at lower temperature for longer so you don't burn the outside. Works for us. Cook until it feels firm when pressed. Or stick a knife in it to see if it comes out clean. You probably know that already ...

Don't know what you can do about recovery though!

Eat the centre of the cake...or give it to your kids. Honestly, tasted quite nice or am I just strange?

Prima - i don't mind eating cake batter (used too be my fav bit when my mum made cakes when i got the bowl to lick out) - but as dc's are 3 and 18m i flt a bit weird about giving them raw egg - or am i being ott??

Actually cake doesn't taste as good as hoped anyway - new recipe and i don't think i will do it again - stick to my fail safe familiar one in future...
