Using red wine instead of Sherry

Can I do this? I want to make a veggie version of a 70s recipe that was a favourite as a child. The recipe calls for Sherry but could I use red wine instead? I don't like either to drink but was given a bottle of red and thought I'd use it in cooking.

Red wine will make the sauce go a funny colour. If you don't mind that you could heat some wine and reduce it down a bit.

Sweet or dry sherry? In either case, the difference in taste to red wine is substantial.

Also, you will be using neither pork nor sherry ! Doesn't bode well to recreate porc a la creme !

I'd look for a veggie dish that uses red wine.

The recipe just says Sherry. I'm always messing with recipes and not had anything inedible happen yet so fingers crossed it will work.

Sherry has a higher alcohol content than wine, so more will evaporate. If you really want to use wine, use less, or the sauce will be runnier.

I think I’d substitute white wine for sherry before red wine tbh

I made a tomato
Celery and apple soup (John lovey) on Friday and it asked for Sherry. I only had brandy or rum as had been foaling fruit. I ended up using Sake and it worked very well
As a replacement.

I finally got round to making it and used white wine. It tasted great 😁
