Using up clementines

Morning all.

I have a net of clementines which are starting to dry out. Bought for dds lunch now they've decided they don't really fancy them.

What can I do that's not clementine cake and not a faff.

When I make grapefruit and orange fruit salad I remove all the pith but that would be tricky with clementines so I would slice them in half and serve with home made toffee or butterscotch sauce and cream.
You’re probably an old hand at toffee sauce but if not don’t boil it for long or it will turn into tooth pulling toffee as soon as it makes contact with the cold fruit.

Or, peel and separate the segments. Freeze in a bag and use as ice cubes.

marmalade...it's much nicer with the lighter citrus fruits rather than sevilles which can be a bit bitter imo.

I do 1lb fruit, 1 lb sugar, 1 pint water.....I cut the fruit into quarters, cover it with water and boil it until the peel is soft enough to press away to nothing with your fingers, 20 mins should be more than enough with clementines, drain the fruit, keep the water for your 1 pint
take the fruit off the skin and chop peel into shreds, add sugar and the water you have and boil to a set....it won't make much, but it is pretty quick to do for smaller amounts

Ooh I have another one - Ottolenghi's chicken with clementines. It will use up 400g(!) of clementines. It's just a bog standard tray bake in terms of process (marinade chicken but only if you have time, bung everything together in roasting tin, roast) but as Peter Kay would say, it's a taste sensation. It's a good way to get rid of any old arak, ouzo or Pernod you might have lying around, but if you don't I've just used white wine or fino sherry and it worked beautifully.
