How do you make nice, rich low salt Bolognese sauce

Need to have a low salt diet due to hypertension. I usually buy jars but obviously going to make my own from now on. I have attempted to make it and it was disgusting. I used passata, lightly fried garlic, basil, oregano, and sugar with a dash of Worcestershire sauce. It honestly tasted awfully sour and I already added so much sugar yet still tasted awful. Any one have a rich Bolognese sauce recipe that's similar to dolmio but not high in salt?

Could be controversial but in this house we all go mad for a tomato based sauce made like this:

Fry onions in olive oil

Add a good slosh of balsamic vinegar and a tea spoon of sugar

Let it simmer and sweeten the onions

Whack in your meat / veggies and tomatoes and simmer for as long as you can wait.

Yum!

Thank you everyone. Seems like red wine is the way to go. Thank goodness I detest it other wise I'd drink the whole bottle Grin

This is our perfect tomato sauce, we use about 2/3 the recommended butter. We freeze the extra so it’s as easy as a jar. No sugar, but a good long cooking time and some fat: www.google.co.uk/amp/s/food52.com/recipes/13722-marcella-hazan-s-tomato-sauce-with-onion-butter/amp

For richness in bolognese, I use chicken liver, just a tiny amount, like 50g in a whole batch.

Onion, carrot, celery, equal quantities
Lots of garlic
Full fat mince
Passata
Bay leaves
Oregano
Thyme

Cook for 5 hours in the oven on low

Lightly blend with a hand blender
