Calfs head with brain sauce anyone?

My mum gave me a really fantastic old fashioned cookery book from 1962.
Here is how you cook the above.

1.split the head down the centre
2.wash and remove the brains
3.put it in pan of cold water and bring to the boil
4.remove any scum! Lovely!
5.simmer for 3 hours then take out the meat and chop it neatly.
9.Cut the tongue into neat fingers and add to the cooked meat when serving....bleughhhh

For the brain sauce.

1.soak the brain in coldwater and vinegar or lemon juice. This will whiten it.
2.simmer for 15 minutes, strain chop and add to the white sauce.
3.arrange the meat from the head onto a hot dish, pour over the brain sauce and garnish with snippets of crisp toast.

Recipes for all the family! I think i'll pass. The other recipes are great though.
Anyone got a more vomit-inducing recipe?

Ihave a friend who ate theis "tete de veaux" in a 3 Michelin star restaurant in Paris as part of a gastro tour.
When she told me I had the same reaction as you.....and topay for it

That is so vile it s unreal!! Have you heard of fromage de tete?Nothing to do with cheese unfortunately.It s the"meat" off a cow's head slowly cooked then covered in jelly in a paté style...Looks as good as it tastes

Actually I don't know about doing this yourself at home but Mum told me one place they lived in there was this restaurant with holes in the tables. They'd place monkeys under the holes and cut off the scalp for you so you just ate the brains out. My parents declined to try that speciality

hang on am looking for monkey brain in this book....no monkey brain recipes but apparently the feet of calf and pig contain a great deal of gelatine and are used to help set moulds and brawn.
No wonder the housewives were worn out, all that hacking and butchering in their own kitchens with only a glass of lemonade to keep them going

Am actually feeling slightly nauseous now .Off to the shops but it will be vegetarian recipe methinks tonight for dinner
