Working from home - slow cooked food with little prep (not slow cooker)

I'm trying to take advantage of working from home by cooking lots of food that needs to cook for ages but doesn't involve much actual prep. Can anyone think of any good recipes along these lines please?

(Not slow cooker recipes please, I've never had much luck with those and the benefit of working from home is I can use the normal oven etc!)

I'll start - I love bean and barley soup from the Silver Spoon. Thank you :)

Oven casserole is a must to try!!! Anything with it. The cheapest meat is amazing when slow cooked. I have done recently:

Beef shanks with potatoes, carrots, onion, whole cloves garlic

Lamb with carrots, onions, garlic and lentils

I usually seal the meat and put it in the bottom of the dish then slightly cook the vegetables and layer it on top of the meat and then make stock on the pan enough to cover the food. AMAZING!!!

My lot love roast pork belly. Make sure the skin is really well scored and dried, lashings of black pepper and a bit of sea salt. Put it on a rack over a deepish baking tray since the amount of fat that drains out is amazing. Blast at full heat in the oven for 20 mins and then turn down to gas mark 2 and leave it for 4-5 hours. If the skin hasn't crackled enough then give it another blast at top heat for about 15 minutes.

Pot roast is also great - v little prep

Lamb Shanks last night. Not cheap (and needed a whole bottle of wine to cover the meat) but delicious for a treat. 3hrs.

Beef brisket is cheap and can be left for hours. It makes a good cottage pie afterwards and the best beef sandwiches, too.
