Fairly healthy family meal ideas with simple ingredients

Need to eat more healthily, I am a keen cook and don't mind complicated lengthy recipes, but I don't do regular supermarket shops and so need to be able to get ingredients locally. Not too keen on pasta but apart from that we like most things.

Simple mild curry. Pan fry chicken/prawn/pork until browned, Squeezy ginger and garlic added with chopped onion (can be fozen) and fried for 5 mins add mild curry powder and cook for couple of mins then add tin of coconut milk along with any cooked veg. Serve with rice

One that I do is a bolognese with veg, and I mean a lot of veg, usually grated in, I can get 7 or more veg in, they include, onion, leeks, peppers, courgettes, mushroom, sweet potato, carrot, basically anything I can put in.

Huge trays of roasted veg, served with chicken/sausages/feta/fish are a favourite in our house. The veg varies depending on what's in the fridge and how long we have to cook it (potatoes and carrots take longer than mushrooms, onions, peppers, courgette). Sometimes it's served with giant couscous or pasta but usually just eaten as it is

Maybe I just need reminding of things I've already made, that curry sounds good, I have made a Makhani curry by Dibna Anand that was amazing but did have a few burs I struggled to get.

Forgot to say, me and DH love roasted veg, but DD hates it, I'm not sure she belongs to us!!!

A Girl called Jack is quite good for this (Not the other books). You generally need to add a bit more veg though. She cooks with a limited range of ingredients, what cant be bought local can be bought irregularly and frozen From her books
Brie and bacon rissotto. Add 100g per person of mushrooms and 80g of peas.serve with side of green veg.
Mushroom strogonoff.

Spanish omelette with whatever veg you like - I like sweet potato and spinach.
Chilli with extra veg- I like to add roasted butternut squash and pepper.
Salmon tray bake with new potatoes and broccoli.
‘Buddha bowl’
Spanish chicken and chickpea stew.
Sausage casserole with beans and Kale.

Have a look at the Roasting Tin cookbooks by Rukmini Iyer , there are several variants (vegetarian & vegan; global recipes; quick recipes) they're all great and set out principles so you can swap in and out various ingredients to suit your preferences

We lots of stir frys with loads of veg in them and serve with noodles.

Ginger chicken or Prawns are big favourites. You can buy a sachet of sauce if you like, I buy a black bean one for our prawn stir fry.

I recommend Mary Berry Quick cooking and Jamie Oliver 7 ways for good ideas.

I had the Roasting Tin book but nothing really appealed especially as DD2 doesn't like roasted veg. So passed it on, although I might have to borrow it back and have another look at it.

have a look at BBC Good Food / Tesco / Sainsbury recipes online. You can filter them all by family friendly / low fat / low cal etc.

Just seen a nice recipe for a Greek Buddha bowl on Pinterest so going to try that with halloumi and chicken.

Our Fay Ripley cookbooks are overused and starting to fall apart - straightforward ingredients (not buying a jar of something to use 5ml then it goes off waiting to be used again) and seem to suit all ages. I enjoy cooking but like their simplicity.
