Right I have just had my kitchen redone and haven't really unpacked anything useful so does anyone have a really easy recipe for something cakey ? I have to fill a paper plate....

Buy a box, where you just add an egg, but buy extra toppings to go on the icing, like sugar strands, or silver balls, that way it looks like you did it yourself

Ah thats an idea - I do actually have a box in the cupboard but thought it would look too obvious but maybe if I just tart them up....

Are rock cakes easy ? Haven't made those before. I usually like baking but given the kitchen situation am finding it a bit tricky !

i used the recipe here this afternoon. I managed to get about 24 out of it, tho i think i ate half of them before going to get boys from school.

This was so easy to make,
Apple and Cinnamon cake
300g Self raising flour
1.5 tsp ground cinnamon
1/2 tsp salt
250g demerara sugar
50g raisins (i used sultanas)
125g Butter, melted
2 large eggs, beaten
175ml milk
250g (about 3 dessert) apples, peeled, cored and chopped
icing sugar for dredging
Sift the flour, cinnamon and salt into a bowl and stir in the sugar and raisins. Mix in the melted butter, eggs, milk and apples and beat until smooth (this is a bit of a contradiction, cos it'll never be smooth with chopped apples in!!)
Turn into a lined and greased 20cm (8") square cake tin, bake in a preheated oven at 180c, Gas mark 4, for 1 to 1 1/4 hours, until cake springs back when lightly pressed
Turn onto a wire rack to cool, sprinkle with icing sugar, and fill your face!!!

Oh I know Twig but I have a box in just in case I need something easy to do with dd (2.7) and the boxes are great for that....

I was possibly thinking muffins - I have some frozen blueberries in the freezer I could use up and also some frozen raspberries... Might be able to locate a mixing bowl with a bit of effort and have a wooden spoon out so that would do wouldn't it ? I also have the Muffin recipe book that everyone raves about on here....

These are great aswell and if you have a food processor unpacked just put all the ingr in to that and wizz up (leave out the choc chips though and add them in after otherwise they get crushed)
Chocolate chip cookies

150g SR flour
50g margarine
50g sugar
50g chocolate chips
1 egg
1 ? 2 tbsp water

Method
Carefully weigh/measure flour into bowl. (6-rounded tbsp is about right).
Weigh margarine and add to bowl. Rub in as shown.
Stir in the sugar and chocolate chips.
Break egg into a small bowl and beat with a fork.
Add to mixture with just enough water to mix to a soft but not sticky dough.
Divide into 8 even sized pieces and place in rough heaps onto tray.

Bake Gas 6, electric 190*C for 12 ? 15 minutes until golden brown.

Plan A - will be muffins
Plan B - choc crispie cakes
Plan C - The choc cake box I have doctored with smarties or something...

ABSOLUTELY they count!! How old is your LO? If they can help in any way then let them and then, even if they're really messy and crap looking, you can say "ahh we had such a bonding experience making them together.." really loudly when you drop them off

yes frozen fruit muffins .. use the plain recipe and just reduce the milk to about 5oz

Quick update for anyone who doesn't have a life ... I have just got blueberry muffins out of the oven and they taste ok ! I'm probably only going to take 8 as these are the ones that look like muffins (the rest have gone a bit flat on top so we'll scoff those at home).
