Deli style salads

Can anyone recommend a good cook book for delicious complex salads that you might get in a nice vegan cafe (though not necessarily looking for vegan recipes).

I have various Ottolenghi books already which I rarely use as I find they need too much forward thinking and time. Ideally I’m looking for something more day-to-day which I could use to make interesting lunches when working from home. Something I could look at at 11:00, have ingredients to hand and throw some elements in to cook so they are ready to assemble into a delicious salad at 12.30.

Anyone got any great suggestions?

Not a book but my go to for salad inspiration is always the Olive Magazine website. Lots of lovely ideas there.

I can recommend a salad that is easily veganised which I ate alot in Russia.

Cooked beetroot diced; lots of fresh dill, grated raw garlic (a small amount) and then mixed with either vegan yogurt or vegan mayo.

Also Salat olivier (Russian) can be veganised... diced potato (very small diced, diced cooked carrot, peas with vegan may and again dill. The non-vegan version also has either herring or smoked sausage.

Then cooked carrots, cold with a maple syrup, olive oil and grainy mustard dressing is a good one.

Salad Love by David Bez is a good book with a variety of salads. It doesn’t so much have recipes (if I remember correctly) but lists ingredients that can be assembled. It has a variety of salads - vegan, vegetarian, meat-based etc and offers alternatives.

Much like the suggestion for Olive Magazine’s website above, I also recommend Epicurious’ website www.epicurious.com/search/Salad. Make sure to filter just to recipes after clicking that link to avoid articles and such. I’ve had my eye on these two recipes for Fall:

I actually have the Leon salads book @242Mummy and haven’t tried much in there, I think only the pastrami one. which recipes would you recommend?

I've used most of the veggie salad recipes for DH's lunches (he is vegetarian). His favourites from the book are the tomato, feta and lentil salad, The Has-Bean and Spinach, Chickpea and Almond salad. Black rice peas was interesting (but hold back on that red chilli!) The grainy ones with quinoa were nice.

I liked the superclass chicken and quinoa and made the tabbouleh for a summer buffet thing with grilled meats etc which went down well.

I took a punt on a book which arrived today and it’s perfect ..it’s called ‘Ripe Recipes - A Third Helping’ and it’s has lots that I’m keen to try.
