I think the yeast dies if left for too long without baking.

can make bread dough in the evening, shape it and leave in the fridge to rise overnight - counter-intuitive but it does work slowly. then can bake in the morning for fresh rolls. You can freeze bread dough too and cook at a later date - I did that in home Ec at school.

So if it was made yesterday morning and left out over night it is wasted (I didn't make it btw)

Depends where it was left, i.e. what temperature. In a cool place, it can be left out overnight and then baked as usual in the morning. I often do this in the cooler months.

Sometimes in warmer weather it can rise too much and then be a bit odd. To be honest though, I would bake it anyway, there's not much to lose is there and it might be fine.
