Thyme what can I do with it?

So have a lovely bunch of thyme...never used it before. What can I do with it?

It's good in risotto, or I'd use it with some red onions on a puff pastry sheet perhaps. Slice the onions and fry gently with the thyme and some olive oil. Season well, spread over the pastry sheet (perhaps with some goats cheese?) and cook at a high temperature for 15-20 minutes.

I put it under the skin of a chicken before i roast it. It gives a lovely flavour to the roast meat.

Jamie Oliver's courgette carbonara uses thyme, and is delicious. Is also lovely in the sauce for a chicken pie.

If it's going in a stew-type dish, no need to pick off the leaves.
Put the sprigs in whole & fish out the twigs after cooking - it helps if you count them.

Stick it inside a chicken, sprinkle lemon juice and pepper on the skin and cook as you would normally.

Soften up some butter and roll it out. Fry up some thyme in a little of the butter then, when cool, spread on the rolled out butter and roll it up. This should keep in the fridge for ages. You can then slice bits off to use for all sorts of the things mentioned above....putting under the skin of a chicken before roasting, frying mushrooms in etc..
