Top Christmas recipes that can be made in advance

Wasn't sure whether to put this in the Christmas topic or here...

Anyway, I am starting to think about what to feed the masses over the Christmas period and wondered if anyone fancied sharing any recipes for things I could make in advance to lighten the load.

Pennies, bumping cos would also like some new ideas.

My usual Christmas freezer stocks include:
sausage rolls (made with good sausages from butchers)
Mince pies.
Cranberry sauce
Bread sauce
Red Cabbage
Stuffing
Sausage/bacon rolls
Parboiled parmesan parsnips

Also, beef, pork or lamb casseroles (which can be served as is or made into pie/cobbler)

Bolognese sauce (which can be used as is with spag or made into chilli/lasagne/cottage pie)

Fish pie

Apple crumble

Lemon meringue ice-cream

raspberry cinnamon torte (but sometimes made with mincemeat)

Cakes: lemon drizzle; date & walnut; all-bran; weetabix; boiled fruit

(Never all these things over one Christmas, just things i've done over the years!)

Happy to provide any recipes you might be interested in.

Well, I did my Xmas puds this week so that's sorted.

Thanks for that list lilospell - I'd also like the raspberry & cinamon recipe too if that's OK.

I usually have the staples listed above in the freezer and we're on a mission to eat most of it up so I can replace it with something a bit special and thereby save hassle over the festive week. I'm hosting it so I need to churn out some good meals for...

  1. Xmas eve
  2. Xmas day (a no brainer though)
  3. Boxing day lunch & dinner

Hate recylced turkey.

Am not normally this early with stuff but I'm trying to get organised this year for the first time in my life.

Raspberry Cinnamon Torte:
By hand or preferably with food processor, mix 5oz each of margarine, sugar, ground almonds, self raising flour, 1 egg, 1tsp ground cinnamon. Spread half the mixture in 8 inch loose bottomed/spring release cake tin. Sprinkle over 8 oz rasberries then dot with remaining mixture so that it almost covers the fruit (don't worry if it doesn't completely cover it) Bake 45 mins gas mark 4. You might need to cover with foil if it starts to brown too much (If I was doing this to freeze, would only cook for 30 mins, then defrost and reheat for 15 - 20 mins before serving) Cool in tin for about an hour. Can serve with raspberry sauce, btu not essential. Cream probably is. I often use mincemeat at Christmas instead of the raspberries. This is SO simple, esp if you have a food processor, and absolutely delicious. Sometimes sprinkle with icing sugar before serving as it doesn't always look anywhere as nice as it tastes(sorry,only just seen that you'd asked for the recipe)

Reading another thread about an autumnal party, reminded me how gorgeous hot roast pork sandwiches are. I will do that one lunch over Christmas week, served with soup. Know what you mean about re-cycled turkey, HOWEVER, turkey and ham pie (mix with a white sauce and top with puff pastry) is delicious. I also sometimes recycle left over Christmas Day veg by mixing with a white sauce, topping with grated cheese & breadcrumbs, serve with baked ham. I can't help feeling that the key to all of this is keeping it simple. Even if you are entertaining, simple doesn't mean it's not tasty.
We usually have a crowd on Boxing Day, I tend to do a selection of roast meats and accompaniments. Can't believe you've not had more responses to this! Was hoping to get some fab ideas myself. Perhaps this will bump it again?
