Anyone recommend a good vegetarian cookbook?

Hi all, just wondered if anyone can recommend a really good vegetarian cookbook? I got Jamie Oliver's Veg out of the library and have had a good look through it but it looks like it's full of recipes that either take ages to make or contain expensive and hard-to-source ingredients like porcini mushrooms. Thanks!

I was veggie during my teens and used to like Rose Elliott. The Christmas book is lovely.

(You can buy dried porcini mushrooms from most large supermarkets).
The Jamie Oliver veg book is great!

Hugh Fearnley Whatshistits' veg books are excellent. We also use the Bosh books lots.

The green roasting tin is excellent. The majority of recipes just involve a bit of chopping and then you bung it in the oven.

That's what I came here to recommend. The recipes are simple but surprisingly tasty

I also love green roasting tin and Hugh FW's veg one.

Sonia Sodha's Fresh is good too, all Indian veg recipes.

I have to say, veg recipes can seem a bit more fiddly if you're used to cooking with meat. You just need to do more to get interesting textures and flavours. Cooking with meat has meat as the main event, you need to work harder with veg.

Another vote for HFW, they are simple and include lots of swaps. An old classic I love is Cranks.

PracticingPerson · 17/10/2020 06:23

Just to say veg recipes are not more fiddly than meat! It is just about what you are used to.

Angela Liddon - oh she glows/oh she glows every day.
Both vegan, but easy to add cheese if you wanted to

Thecatisboss · 17/10/2020 06:38

Meera sodha Fresh India or East are good I've got both as is HFW Veg prefer the first one to his second.

Anna Jones is excellent. She was trained by Jamie Oliver and her food make up he majority of our normal meals now.

Green roasting tin is great.

I want to get Ottolenghi’s book Plenty. Apparently that’s great.
