Which soup shall I make today?

Just as the title says. Preferably veggie. I made roasted tomato soup last week so fancy something different to that.

Well, I’m making a version of Diana Henry’s winter minestrone with what I have in the fridge. Leeks, squash, runner beans, potato and fennel. Made some walnut and parsley pesto last night, so that gets stirred in at the end. It’s very good 👍

I've just made ribolitta and it was gorgeous. The other day I made one with yellow pepper, sweetcorn, onion, potato, green chilli, coconut milk and various spices and it was gorgeous. I was going to start a soup recipes thread because this time of year I could eat it for every single meal.

That all sound really good. I played it safe & made a minestrone in the end.

However I will return to this thread for ideas. Now that I'm wfh I don't have the excuses of previous winters!

Butternut squash soup with green curry and coconut milk
Chicken mulligatawny soup
Soup au pistol (a Provincal minestrone style soup with a spoonful of pesto added at the end)
Coconut and corn chowder
Smoked haddock chowder
Noodle soups - udon, ramen, pho
Koreans love soup, and it is eaten at most meals including breakfast. I love soon doubu jiggae (spicy soft tofu soup), kong namul (a light bean sprout soup made with their version of dashi), and their version of oxtail soup which is a creamy white broth due to boiling gently the washed oxtails for hours.

Oh, so many of these sound good! Can anyone link to any online recipes they have used that worked out well? I’m an inexperienced soup maker so need a recipe to follow!

I made this red lentil and veg soup the other day link and it was very nice - I did add a can of cannellini beans and blend it.

I’ve also made this cauliflower and chestnut soup link in the past and it was lovely.

Ooh if you have another soup making day I would highly recommend Mary Berrys butternut squash soup, lovely flavours and super easy to make

I second PP's recommendation of Mary Berry's butternut squash soup. A thing of beauty.

I'd love some recommendations for tried and tested Korean soups as mentioned above and ramen recipes please!
