Lamb meatballs

I've had some really good advice about cooking so here is another request if anyone fancies giving any suggestions.

I have some lamb meatballs defrosting.

How would you cook them and what would you do with them?

I'm at a bit of a blank except putting a bit of mint sauce on them!

I have a great recipe for lamb meatballs, basically involves a tomato sauce with added ras el hanout so Morroccan style. You could add extra spice and dried fruit if you like. Served with couscous. I've had the recipe years so can't remember where it's from but I like it!

A nice Moroccan style sauce, passata, onions, garlic, cumin, ras el hanout, paprika and serve with couscous

Rick Stein does a great lamb kofta recipe with a yogurt sauce.

Otherwise I’d so a tagine of sorts with olives, preserved lemons, and Moroccan herbs.

I make this with lamb meatballs in the place of diced lamb. I just cook the meatballs first and add them later. It’s a fabulous way to get the DC to eat spinach!

I will make it tomorrow and post a pic I am really enjoying cooking at the minute.

It's nice getting different ideas.

I have some nice bass fillets In The freezer which I want to do at the weekend.

Any ideas for those?

I’d either go Thai with a bass and king prawn easy Thai soup (I base it on a Jamie Oliver chicken soup recipe as a very rough guide but without the butternut squash and I add fish sauce, lemongrass and whatever other Thai aromatics I’ve got), over noodles or rice. Or I’d cook it en papillote, with shallots, red pepper, cherry tomatoes, garlic, chilli, spring onion, parsley and lemon, served with baby potatoes dressed in plenty of butter and parsley.

I can make a Thai green curry sauce ok so I might do the soup that you have suggested and then the fish but with the Thai green curry sauce as a side.

For the sea bass I'd do a spanish-ish tray bake - I'd put in a roasting tin some cubed potatoes, peppers, a head of garlic broken into cloves but not peeled, half a ring of chorizo cut into coins and some thyme, toss with olive oil, s&p and give them a head start in a hot oven. Once they're browned and starting to soften, throw in a punnet of cherry toms and olives and back for another 10 mins. Finally put the sea bass fillets on top topped with some breadcrumbs that you've mixed with olive oil, seasoning, maybe some crushed garlic, then bake 10 more mins or so until the fish is done and breadcrumbs are crispy. If you have some sherry kicking about you could pour it into the roasting tray for a little bit of sauce. Could have some allioli on the side. Green salad. Maybe some bread though there are potatoes in there too.
