Anyone interested in a sourdough thread?

Lockdown cliche.
I've spent hours reading posts, blogs and watching videos and have mastered the art of a white sourdough. My photos are no longer of children and puppies but close ups of holes and crusts!
But my whole meal or whole grain and not good.

I understand the enthusiasm. I had real problems with my sourdough a few years ago, even after a class, so gave up. Then I saw a book mentioned in the Newspaper which sounded excellent and I gave it another go. I still couldn't get anything better than a bread based discus, suitable for throwing in the Olympics. Then, a friend gave me some of her starter and the corner has well and truly been turned! I am producing loaves almost as good as the artisan sourdough bakery up the road. It is a wonderful feeling!!!

I'm addicted 👋created my starter in April, horrors of loaves until I went low hydration and fridge ferment - seems to be my perfect formula.

I've started making my loaves 😂 makes me giggle. I was just thinking tonight how much I just love it

I make sourdough bread but never tried full % wholemeal loaf as I don’t like it.
I use different types of flours that I add to white.

I am making White loaves, but with a Wholemeal or Rye starter (I have both). I understand that Rye has more protein so can feed a stronger starter and I am guessing that Wholemeal flour possibly still has yeasts in it so that may boost the yeast count, but I don't know. Anyway, it works well so, having finally succeeded I am loath to change.
