Really nice family dinners

Hi all. I'm looking for some inspiration for our family evening meals.

We used to have so many different clubs on each weeknight so meals were quick staples like spaghetti bolognese, fajitas, curries, vegetable baked; stuff I could manage in one or 2 pots but with everything still closed, and staying closed for the foreseeable I'm looking to start having nicer meals but lacking in ideas!

Hit me with your tasty, nicer meals that will be a bit of a treat!

The two things my DC always ask for at weekends, when we have more time, are a proper roast (but not chicken) and a chicken curry with homemade breads (naan or paratha, they’re not fussy).

Thai green curry .. takes 10 mins and 20 simmering. (Get a rice cooker they are the best invention on Gods earth) and use paste and tin of coconut milk not sauce.. bung in any veg..

Our other favourite is Jamie Oliver's Greek chicken from 15 minute meals.. to die for..

I can't recommend enough the Diana Henry book called "from the oven to the table". Everything is tray bakes or one-pot casseroles that go in the oven but lots feels super special and "treat" cooking.

The other one I would recommend is the Home Cookery Year by Claire Thomson - it's split into seasons, and then within the seasons there are the kind of day to day recipes, budget/storecupboard recipes, then "leisurely weekend cooking", then "treat cooking", and a feast recipe for each season. Very international recipes but without weird ingredients and the author has three kids herself and it's notable that it's not a lot of spicy/too strong flavours.

thehappyfoodie.co.uk/recipes/nadiya-hussains-egg-rolls These are really easy and quick, but also tasty, fairly cheap and nutritious. We just had them for supper with salad. I used one big tortilla (spinach variety from M&S, which looked nice), 2 eggs, 3 chestnut mushrooms, a little sundried tomato paste and a few chopped stoneless black olives per person. You could easily add cheese, but I don't think it needs it. You could ring the changes in various other ways too.
