What can I do with lots of almonds?

Checked the store cupboard today and I have an astronomical amount of almonds, both whole and ground. There’s about a kilo altogether. So I’m looking for recipes that use substantial quantities, both sweet and savoury options welcome but savoury preferred given the quantity. Any ideas?

Marzipan - baked is nice, it doesn't just have to be on Christmas cake.
Frangipane tarts with greengages or plums. Praline. Panforte. Spiced nuts. Battenberg cake. A Christmas Simnel cake?

Cakes using ground almonds?

Dalooah · 04/10/2020 04:38

If you're feeling adventurous you could try making macarons but personally I'd just be eating the whole ones!

Dalooah · 04/10/2020 04:39

Ooh just remembered; you could try spiced or caramelised almonds- could be good for holiday gifts

bettsbattenburg · 04/10/2020 05:23

Wow, lots of ideas, thank you everyone! Given that’s it’s so close to Xmas I think I’ll probably use them in some festive baking. I might even try and make my own marzipan.

Does anyone have any good recipes for spiced or caramelised nuts? I do like them but haven’t found a recipe I’m happy with yet.

My favourite cake: Nigellas damp lemon almond cake. Freezes well too.

karmakameleon · 04/10/2020 10:27

Is that the one where you boil the lemons whole? I haven’t made that for ages but I love it because it makes the house smell beautiful.

English almond macaroons.

I can't remember where I got the recipe originally, but it might be Pru Leith's cookery Bible

4oz ground almonds
6oz sugar (granulated and caster both fine)
1tsb flour
2 egg whites
Vanilla
Jam to decorate

Mix everything except the jam, and then daub onto rice paper on a non stick tray. You can just about get away with a greased teflon baking sheet (one of the removable ones) as an alternative but don't think you can just grease the tray - they are incredibly sticky.

Squash the middle down a bit so you can pop a blob of jam in.

Bake for 12 mins at 180 fan - til just going brown/golden around the edges.

Leave to cool before you attempt to remove.

They are so yummy though look nothing like French macarons.
