Looking for some ideas please for healthy vege meals...

Anything where the focus is vegetables/lentils/beans/tofu as opposed to cheese!

Chillis, curries, stir fries etc...

What sorts of things do you like to eat?

Currently eating a three bean chilli...

I quite like the Linda McCartney shredded “duck” with noodles, veg and soy sauce.

Butternut squash or mushroom risotto.

Pasta Arabiatta with spinach and a bit of feta crumbled over the top.

Try the Bosh healthy book - recipes in there are amazing and really tasty. I just replace some of the vegan products with their dairy equivalents.

Not too carb heavy is key - so loads of legumes like kidney, black, black eyed beans, chick peas, lentils are your friends. Nuts are a good protein source too.

So:
stir fry with veg and cashews
Chilli
Puy lentil bolognese/lasagna/shepherds pie (with sweet potato and swede mash)

This is a good one, apart from the onion, everything comes out of the freezer / cupboard, so a good standby and very healthy. I add broccoli to it too.

Vegan curry feast!
Onion, beetroot and carrot bajis.
Wild mushroom veggie pilau/pilaf
Cauliflower curry
Any kind of Dal
Coconut riata
Vegan naan with coconut milk in place of yoghurt and cooked in a dry frying pan with a lid to keep the humidity up.
Pilaf can be a meal on its own.

Thanks all!! I'm not a vege at the moment but don't eat much meat. Would like to move towards becoming vegetarian but not sure how to go about it. Some great suggestions I will have a go at some of them.

I am veggie and my daughter is vegan. We just had one of our fave meals.
Stir fry courgette, broccoli, red pepper and mushrooms in a little oil. Add a pack of Cauldron marinated tofu. Fry all together then add a sachet of stir fry sauce or some soy sauce or both. Add one pack of Uncle Ben’s microwave vegetable rice (not heated up) Mix all together and serve with toasted pittas.

Followign as we are eating less meat but seem very cheese and pasta heavy at the moment.

I can get that we should eat more black beans/kidney beans/chick peas. All things I love. I just dont know how to turn theminto recipes or meals. I have to follow something!

Im not very inventive wih salada either. I can chop tomatoe/lettuce/cucumber etc. But dont know how to make the variety of lovely salads people do..

Brilliant thank you! Going to add some of these each week to our meal plan and start to build up as we go.

Just need to make sure we get enough protein.

I’d recommend vegan Richa’s website. She has loads of recipes using beans and lentils. Everything I’ve made has been delicious.

If you like black beans, I made these Sony black beans the other day, pretty much exactly as written but with 1.5tbsp of smoked paprika added. Freezes well and delicious with a jacket spud.

I agree, I don’t like the fake meat sandwich slices, burgers or sausages. I’m quite a big fan of Tesco veggie frozen range though - spicey bean burgers, courgette and corn fritters etc. They are my burger substitute and handy to have in the freezer.

Yes, that’s a great idea @TazMac. I’ve had them with rice, jacket potatoes, jacket sweet potatoes and on their own for lunch so far. Next time I’m doing a triple batch! They were recommended by someone else on here.
