Anyone want to share fast, healthy, easy dinner recipes? I'm beyond exhausted to try difficult online recipes, but would love to see some tried and tested home recipes from MN's!!

Tonight I made an anchovy, caper, chilli and tomato sauce with garlic and sundried tomatoes and mixed with pasta and toasted pine nuts. All from my store cupboard. I mixed some leftover kale and broccoli into it too.

What kind of things do you like? As in salads / hearty / one pot dishes etc? Is anything a no go / any food intolerances? Then people can tailor their recommendations Smile

I eat anything really. Try to stay mostly plant based but I do enjoy it all. Grin

Fast fried rice (serves 4)
Cook 2 packets of microwave rice according to the packet instructions then rinse in cold water and drain very well. Chop up a red pepper and a bunch of spring onions. Heat 2 spoons of sunflower oil in a large pan over a high heat, add the vegetables with a crushed clove of garlic and stir fry for 3-4 minutes. Add a handful of peas, a small tin of sweet corn and the rice then stir-fry for 4-5 minutes. Make a well in the centre of the mixture, add 2 or 3 beaten eggs, cook for 1 minute then stir the eggs into the rice. When the eggs have set, add in some soy sauce. Voila!

Not sure this is super fast in that it takes about 30 minutes to cook, but preparation is almost non existent and we have often:

Roasted cauliflower with basic pilaf

Cut cauliflower into florets and place on a roasting tray. Roll in olive oil, salt and cumin and roast for approximately 25-35 minutes, turning about half way.

Slice onion and fry in a little olive oil or butter until soft and translucent. Add teaspoon fennel seeds, bay leave and some turmeric then preferred rice (we just use long grain because it's easiest). Stir to coat rice then add chicken stock/water as required for type of rice. Bring to slow simmer and cover until cooked.

My quick healthy meals are olive mushroom pepper omlette (put these on my Saturday night pizza too!) with parmesan and I like this with tomatoes dressed balsamic and extra virgin olive oil, pan fried fish with dressed or roasted veg, tuna and sweetcorn mayo in a jacket with dressed salad, and soup (with some seeded supermarket bread and butter for lunches). I would recommend buying soup maker the consistency and clean up is much better than using blender (unless you have an expensive stick blender I dont!). Oh beans on toast yum

There's a book called "The Roasting Tin" that might suit you.
Basically, you put different things on the tin in the oven at different times, add seasonings & the meal cooks itself.
I bought it for DH, thinking it might improve/increase his repertoire.....
