Cooked roast chicken in fridge - how long until I have to bin it?

I often end up with leftovers from Sunday roast, we sometimes have them in sandwiches, but was thinking of doing a curry with them next week. Am unsure how long I can leave chicken in the fridge though. Does anyone know? TIA

we usually stretch it as far as Wednesday but no longer

I would only leeve it for 3 days.

You could always strip the meat off and freeze it?

I would leave it 5 days.
Make the curry and freeze it.
Don;t waste good meat.

I think you are right - three days seems like plenty. Wouldn't have thought of freezing it, DP is a bit odd about freezing and defrosting of meat.

Doesnt it also depend on the date? I would only keep it three days if the use by date was after that. Or would it be ok if it was cooked?

Strip any decent meat off the carcass and boil up the bones to make stock. And then you can make a risotto or soup with the stock. You can add the bits of chicken to the risotto if you want, or use them for something else.

How do I make a soup then? I often toy with the idea of doing that and never get around to it.

Soup

Chop up onion and cook in butter and a little olive oil in a large heavy-bottomed pot. Add a stick of chopped celery and a clove of garlic. Sweat. Chop up vegetable of your choice into cubes (carrot is good to start off with), add to pot and sweat over a low heat, then add stock and cook until vegetables are tender. Adjust seasoning. Add herbs/spices (eg coriander leaves for carrot). Blend if you like smooth soup.

A chopped potato or two cooked with the other vegetables will lend creaminess to a blended soup but you shouldn't freeze soup with potatoes in.
