please recommend a good after work cookbook?

Ive already got one or two of nigel slaters, but although I love his food, so many of the recipes involve tons of butter or cream.

Need some other good recommendations please!
Ive seen a few in the library but they look a bit dull.

Want good, easy to cook recipes.

By the way loved the school dinner lady but recipes took me forever and the washing up so long!

I had a look through the new Nigella Lawson one at my in-laws. I haven't watched the series but I'm going to buy the book. Loads of very tasty and quick recipes.

I was given 'Cook yourself thin' for my birthday recently and its great - low fat recipes that are easy to get together in about 20 mins-30mins ish, Once you make the recipe once you can do it even more quickly the next time as well. HTH

Mind you, she is another saturated fat criminal. I know what you mean about Nigel. 'Add a good slug of double cream... dot the top with chunks of butter... stir in a few glugs of oil...' good god man, are you trying to kill us?

it is difficult to be low calorie and quick and nice because a lump of butter or cream does replace the flavour you get long cooking or mucho fiddling around.

i find it better to just cook whatever i want to but substitute, so 0% fat greek yog, fresh herbs, sweet potato, wholemeal pasta etc.
