Urgent question - veg in slow cooker

Does the veg need to be fully covered in some liquid?
I am making a veg curry but want to substitute tinned tomatoes in the recipe for the same amount of coconut milk. I am planning to add the coconut milk towards the end so it doesnt go horrible.
So for now I just have my veg, curry paste and stock in the slow cooker. There is not quite enough stock to cover the veg. Is it a problem? I'd rather not add more so it is not too runny but will the veg cook properly?

Don't add any more liquid!

I find that slow cookers create quite a lot of steam/condensation, so I always place a piece of greaseproof/parchment paper over the food to create a barrier between it & the lid. Scrunch the paper up first then smooth out - it will lie better.

Less is more when it comes to liquid on a slow cooker.

I usually half the liquid from a normal recipe because steam!

You could try using coconut powder instead of milk.
