We love casseroles in our house but I seem to be rotating just three at the moment (Beef, Turkey & Chicken) they all tend to have the same boring veg in them so I was wondering if any MNer's have any more inventive ones they would like to share with me?

fry onion and sliced carrot for a few minutes in a little oil

throw in casserole / stewing cake to brown it

add a tin of tomatoes, then fill the tin with beef stock and throw that in

add a tin of canellini beans and a tin of butter beans

cook on low heat for 2 - 3 hours

serve with mash

Irish stew

onion, carrot, neck of lamb, potatoes (old floury potatoes) all in bite size pieces

cover with water, add seasoning

cook on low heat for 2 - 3 hours

get packet of oxtail soup, mix to a paste with a little cold water and add to stew in last 20 minutes

again .. yum

I have a dead easy and v nice but not at all gourmet one you can have, wellsie. (Use as much or as little veg as you like!)

chopped onion
sliced celery
pork shoulder steak (1 each as a rule)
1 tin veg soup
salt
pepper
worcs sauce
mushrooms, sliced/quartered (depending on size)

Brown onion and celery in frying pan, put in casserole dish. Brown pork steaks, ditto. Pour soup into frying pan, season with salt, pepper and Worcs sauce, heat and scrape meaty bits from pan. Pour over pork and veg and cook at about 180 for 30 mins, then 150 for 90-120 mins. Add mushrooms for last 30 mins.

Also there is a Schwartz Chicken Casserole packet mix, normally with mushrooms but on back of packet it says you can reduce water, add tin of chopped toms and replace mushrooms with a red pepper to make it a Provencale (I think). That is v v good too..

Oh, forgot to say, rinse out soup tin with about ½ canful of water - gets all the bits and makes sauce go further.

Keep them coming ladies. I have a new freezer so the old one is out in the garage waiting to be filled with lovely frozen casseroles to see us through the winter.

sausage casserole (as eaten here tonight):

pre-heat oven to 190 deg C

fry an onion & some garlic in oil.

blend in a tablespoon of flour & cook for a minute.

mix in 1 tin of tomatoes & 1 chopped green pepper. add a shake of worcester sauce, a bayleaf & a teaspoon of marmite. simmer for about 10 minutes.

chop up some sausages & add them to the mixture. put it all into a casserole dish. mix beadcrumbs & grated cheese & sprinkle on top. dot with butter.

bake in the oven for 30 mins.

Nigella has a nice chorizo and butterbean casserole thing I think. CAT me if you would like the recipe and I will see if I can find it for you.
