What to do with whole chicken other than roast dinner?

Any ideas?

Whole curried chicken was my only idea...but not sure dd would eat that as she hates spice!

There's a gorgeous recipe on the BBC website for bombay chicken using a whole bird. Its beautiful served with poppadoms and some naan. A favourite here.

If you are going to slow cook it, turn it upside down.

Peri peri with roasted veg (A Lorraine Pascale recipe)

Tandoori spatchcock (bbq or oven) marinate in yoghurt and spices first.

Simply roasted with Caesar salad (homemade Caesar dressing)

Cut it up and roast with veg - sweetcorn cobs, tomatoes, peppers, sliced potatoes, courgettes, onion and tons of garlic, slosh olive oil over the lot.

Poach the chicken with some bay leaves garlic and celery leaves. Make an egg enriched white sauce with some of the chicken stock, to serve with the sliced chicken and boiled rice.
Use the rest of the stock for soup or to make white sauce, use the rest of the chicken in things like chicken & mushroom pie, or chicken risotto (you could use the stock for this too), or chicken Caesar salad.

Poach it gently in a liquid with loads or aromatics and some white wine. Take chicken out when fully cooked and remove meat from the carcass. Put bones back in the liquid and bring to a boil to reduce it. When reduced by half, you will have a super flavourful broth which you can use to:

  • make the base of a creamy sauce to pour over the chicken. Serve with root veg and potatoes.
  • use stock for a base for noodle soup which you can add slices of chicken and veg
  • use chicken and soup separately in a variety of dishes

You can also put up the chicken into pieces and use that in tray bakes, braised dishes, etc.

Rub ir with peri peri, have it with fries, Nandos sauce and salad.

Or joint it and have a tray bake- so easy, one tray for meat & veg.

I do tray bakes with chacken and change up the veg and seasoning.
A Spanish tray bake with chorizo and potatoes, a Greek , an Italian one, a Moroccan one and an Indian one.
So easy.

Skin it whilst raw. Slash the flesh. Make or buy a curry paste (eg tandoori) and cover the chicken, getting it into the cuts. Cover and roast or bake in chicken brick.
