Beetroot soup recipe anyone?

Has anyone got a good recipe for beetroot soup? I found a Delia one, but too much fuss. Thanks

From memory, vaguely based on Hugh Fearnley Whittingstall, you grate the raw beetroot and fry it a bit (an onion may be involved here as well) then when it's cooked add beef stock and crumble in feta cheese (we do it with Wensleydale) at the end.
Come to think of it this must be wrong, because there's def some pureeing involved, but I can't remember when.

Sorry that was not much help. But it tasted stunningly good when I did it properly

Beetroot soup's really nice with some horseradish sauce stirred in. Sorry I don't have a recipe though.

This one's very easy & is from unfussy Rose Elliot. I used it when ds brought home beetroots from his allotment & it's surprisingly good: 2 large carrots, 2 large onions, 2 stalks celery, 4 oz cabbage, 1 3/4 pints stock, 8 oz tin tomatoes, 1lb cooked beetroot, salt, sugar, 5 fl oz carton soured cream (optional), fresh dill/chives (optional).

Fry chopped onions, carrots, celery & cabbage in oil for c.10 mins. Stir in stock & toms, bring to boil, cover & simmer for c.20 mins until all veg tender. Rub peel off beetroot and cut into dice, add to soup & season well with salt & a little sugar. Bring to boil & simmer gently for 3-4 mins. Liquidise all or half of it, depending on preference. Swirl in soured cream & sprinkle with dill/chives if using.

thanks guys. I love the sound of both feta/wensleydale and the horseradish, wouldn't have thought of those.

Have everything but a cabbage, so I'll get that and give it a go thanks overthehill.

pruners yours sounds yum, a big one pot comfort pile of food!! Perfect for this time of year.
