do you not do shnitzels? so easy ...

coat chicken breast in egg, then matzo meal (or breadcrumbs)

fry et voila!

How about a chicken coconut curry?

Cut (meat, or fish) into chunks

1 onion finely chopped (can be red onion)
1 clove garlic (can be paste - I use Barts)
1 inch ginger root (can be paste - I use Barts)
Fry these for a minute until soft.

Add a table spoon of curry paste (I use Red Curry Paste Gang Ped - authentically Thai) and a 400 g can of coconut milk. Bring to the boil, and add fish or chicken.

At this point I usually separate out enough for my children into a smaller pot, and add some chuncs of apple, or pear, or mango into the childrens pot, and I add 1 chopped red chilli to the grown ups pot.
Cook for 15 minutes
Add 1/2 table spoon soy sauce to the grown ups pot, cook for another minute.

Drizzle some fresh chopped Coriander on top

It is really tasty! And SO easy.

ok

coat chicken pieces in seasoned flour and fry off
add loads of root veggies and stir
add canned plum tomatoes, chicken stock and loads of herbs

simmer for an hour (ish)

serve with cous cous

fry onion and garlic in butter until softened then add chicken until browned.
Add a half pint chicken stock, 1 tbsp tomato puree, 2tsp curry powder and 2 tsp chilli powder. Simmer, covered for 20mins or until cooked. Once cooked add double cream, around 4tbsp, and heat through.

I also add mushrooms.

this is scrummy, and I am told came from the man that started up the Ashoka chain, Charan Gill.

scary - in the matzo meal i add black pepper, pinch of salt, paprika and maybe a pinch of herbs (i use medium matzo meal)

if you want them super crispy you can double coat them

for my DS i cut the chicken into strips so they are mini sized

In waitrose they do packs which contain all the spices you need to make a curry (lots of varieties). You simply buy the extra ingrediants and follow the recipe which comes with the spices. They are brilliant, I use them often and the whole family loves them - all the spices fill the house with a great smell too!

They do a great Chicken Tikka one - you buy the chicken, natural yog, tomato's and tom puree and mix it all with the spices in the pack - they are great, can't recommend them enough!

this was in the Guardian, Thariwala chicken, very easy

2 tbsp oil (vegetable, sunflower, rapeseed or mild olive oil)
2 tsp cumin seeds
1 large onion, finely chopped
1 clove garlic, finely chopped
225g canned chopped tomatoes, whizzed in a mini-blender till smooth
2 tsp grated fresh ginger
2 green chillies, finely chopped, seeds and all
1½ tsp salt
1 tsp ground turmeric
2 tsp garam masala
2 handfuls fresh coriander, chopped
4 chicken thighs, skinned
2 spring onions, very finely chopped

Heat the oil in a large pan, add the cumin seeds and, when they begin to sizzle, the onion and garlic, and fry until golden brown. Remove from the heat, add the tomato, ginger, chillies, salt, turmeric, garam masala and half the coriander. Cook, stirring frequently, over a low heat until the mixture becomes shiny and the oil separates out. This is very important.

Add the chicken and stir-fry for a few minutes, coating it in the sauce. Add boiling water just to cover, bring to the boil, lower the heat, cover and simmer for 20 minutes. Remove the lid, raise the heat and thicken the sauce for five minutes. Garnish with spring onion and the rest of the coriander.

Have to say that this is the best Chicken Curry recipe in the world God Bless Delia.

Finely chop 1 x onion, 1 x celery stick and, 1 x crushed garlic clove and 1 x green pepper.
Fry above until softened
Add shredded cooked chicken
Add 1 tbsp plain flour, 1tsp curry powder (strength to taste), 1 tsp ground ginger and 1 tsp turmeric.
Stir well and cook for a minute or so.
Slowly add 1 pint of chicken stock to make a thick sauce.

Leave to simmer-the longer it's left the nicer it is.
I can make it in half an hour and everyone loves it!
