Friends for lunch tomorrow but they are doing weight watchers at mo. What can I cook?

I was thinking jacket potatoes and salad but bit dull. What low cal fillings can you think of? Or something else entirely.

No make delicious carrot and coriander soup and serve it with bread rolls as only the bread will have any points. Or make a ratatouille-style pasta sauce as that is free of points to and serve it with a little pasta and a small amount of parmesan.
It is not that I don't like baked potatoes, it is just that they are more a comfort-fod thing for a late night on your own iyswim.

agree - soup, you can drizzle a tiny circle of cream on the top with some parsley and croutons to make it look really posh!

Roasted veg in not very much olive oil. Eg: peppers, butternut squash, new potatoes/sweet potatoes, onions, garlic, cubes of tofu, chickpeas, aubergine, courgette, tomatoes ect.

You could do this with rosemary, thyme, smoked paprika, cumin, or whatever you fancy.

Nice with a mixed salad. And houmous.

Then for afters, you could make a cake with fruit puree instead of fat. This means you use less sugar as well!

Try using your best chocolate sponge recipe and substituting most of the fat with pureed prunes, apples, or bananas. Use half the sugar also.

Or if you don't want to bake, you could serve a big fruit salad, or baked peaches/apples/stewed plums with low fat vanilla soygurt.
