Bread Making Help Needed

ManxMum · 07/10/2007 18:35

Make my dough in the bread maker and then cook in the oven but:

I it doesn't seem to rise that well
2 it burns on the top before being fully cooked through

I am cooking in fan assisted oven at 220 degrees and brushing the top with milk.

What am I doing wrong?

I do mine at 180 and cover the top with flour. I use recipe for 1 loaf with 650g flour but I split it into 2 smaller loaves. I don't have any experiance of breadmakers though, Is it supposed to rise inside breadmaker?

Well, it kneads and rises twice, so I was thinking does it need to ruse again before I put it in the oven?

I used 500g flour 1/2 litre water
ioz butter
1 tsp sugar
1tsp salt
yeast

and in the breadmakers full cycle it comes out great, just not the right shaspe! and it goes stale more quickly

Flour on top? will try that next!

Do you use that instant yeast in sachets? That only needs to rise once.

oven is too hot

220 is too hot for a loaf IME - I do pizzas and rolls at that temp, but a loaf will not be cooked through before it burns.

I tried again today.

Yeast I use is for bread machines and when I have used it before have always had good results.

Tried same recipe and did an extra rise (on top of boiler) before baking at 190 degrees for 20 mins. Loaf has risen better and, when it'sd cooled down a bit!, will see how it has done inside.

So fingers crossed!

Bread was excellent!!!

Texture great, not burnt on top, toasted beautifully and not rock-hard this morning!

Many thanks from a happy mum and her toast addict son!!
