I Always keep frozen coriander too, when I need fresh coriander for a curry 👌.

Omelette with soy sauce, spring onions, coriander and chilli

Jamie oliver has some great curry pastes that freeze excellently.

Lime and Coriander rice (using pre cooked and cooked rice 🤤)

Hmmm I guess it depends what your eating/cooking style is.

Ooooh, so many ideas! I'll make sure I try that curry recipe. I wonder if it'll work with aubergine rather tan chicken? I'm not veggie but eat very little meat.

No such thing as too much coriander :o

You can chop it and freeze it in ice cubes.

The curry sauce is so delicious I think it would work with anything but I would cook it first and fry the aubergine on the side and then mix. If you want to cook it all together I bet firm tofu, tofu puffs/knots or even seitan would work really well.

Any curry you can Sub vegetables for meat, my husband is vegetarian so i often do potato and mixed veg, naked glory chicken and veg, quorn chicken and veg, always with chickpeas and lentils. Not a problem 😊

I don't like it frozen as an ingredient, I think it goes weird. Nobody else...?

Jamie olive's curry pastes are good and at least one of them (korma) uses a handful of coriander, and the resulting curry freezes well. I stick all the ingredients (straight from frozen in the case of garlic and ginger) in my nutribullet with a can of coconut milk and blend, then cook on the hob with chicken and vegetables in it. Absolutely delicious!

It does go a bit weird but I only use it in a wet dish so I'm getting the flavour. It wouldn't be possible to use for garnish. Sometimes I cant always go to the shop and need to pull a curry out of nowhere so it's always there. I do keep dried coriander leaf in a jar, it's a firm favourite in curries. Totally know what you mean about the freezer. Coriander is such a love and hate ingredient, I really love it 😍

I chop & freeze it just as it is - don't pack it tightly. A spoon can easily remove the amount you want, but stir it into your dish rather than use as a garnish.
