Quickie - can I freeze cake mix?

Made too much banana and cranberry muffin mix - would rather freeze the surplus if possible .

um, i doubt it, once the raising agents and the wet ingredients are all mixed up. could you make extra muffins and freeze the baked article?

Bake them all and then eat them all, how can you have too much?

So we're confident that I can freeze them once they're done? We've no microwave, so will they defrost ok without going soggy?

I know it's 5 years later, but ... the answer is yes! I was looking for an answer to this question a few days ago.
I had 2 small batches of instant cake mix that i'd added eggs and oil to. (too much mix for my muffin trays- am not a freak!) 1 of them I'd had in the freezer for 2 months, 1 was frozen for only 3 days. I defrosted them both in the fridge and baked them at 180 degrees for 15 minutes.
They both came out delicious, and the ones that had been frozen for longer rose slightly less than the ones that had been frozen for 3 days.
Re bacteria - they'll be dead after the baking so no worries there. ( will report tomorrow if am violently ill overnight! )
