What icing do I need please? What is this called?

I want to make the type of 'icing' that goes inside a chocolate Swiss roll. All the recipes I've seen use whipped cream, but half of us can't eat dairy, and the other half hate cream!
I really like the fake white stuff inside shop-bought Swiss roll, but no idea what it is. Is it meringue icing? Or is that something else entirely?
Thanks to all the knowledgeable bakers out there.

(And did MNHQ get rid of the "baking" topic, I could only find food/recipes Confused)

I’ve always used buttercream if I’m not using jam or fresh cream

W00t · 30/08/2020 20:31

Yes, but that has butter in, which I'd like to avoid.

Use margarine.

Whattodo121 · 30/08/2020 20:35

You could use marshmallow fluff? Not sure what ingredients it has in, you’d have to check but it would probably work!

katy1213 · 30/08/2020 20:37

Is it just buttercream made with marg? Or you could try a wartime mock cream recipe which would probably come up whiter.

greytminds · 30/08/2020 20:38

There is a dairy free squirty cream that tastes very sweet and synthetic but not bad all in all (if you like that kind of thing!) it’s called Food Heaven, Heavenly Vegan whipped cream. I reckon it would be pretty good in a Swiss roll!

pongopig · 30/08/2020 20:49

It is buttercream but as pp said, you can make it with margarine e.g Stork or Pure Sunflower.

BlueJag · 30/08/2020 20:50

Betty Crocker buttercream frosting.

W00t · 30/08/2020 20:52

Aha- that 7 minute frosting sounds kind of like the thing I'm imagining, thanks.

Buttercream is heavier than I want, too similar to cream I think.

JaJaDingDong · 31/08/2020 15:28

Butter cream is nothing like cream.

cariadlet · 31/08/2020 16:02

If you google vegan chocolate swiss roll recipe, you'll find plenty of dairy free recipes. There should be one you like.

W00t · 31/08/2020 16:34

@JaJaDingDong I mean similar in the way it is heavy, cloying, and sticks to your teeth! I don't really like it at all!

OP posts:
JaJaDingDong · 31/08/2020 20:36

What cream do you buy? HmmGrin
I wouldn't have said either cream or butter cream were cloying, nor do they stick to your teeth.

W00t · 31/08/2020 20:59

Well- I don't buy any, because I hate it and my DC are intolerant! Grin
Just normal whipping cream, but I find it so thick and heavy (when family/friends have made cakes). And buttercream makes my teeth itch it's so sweet!
I can cope with cream cheese frosting, but it's not going to go in a chocolate Swiss roll...and my DC don't like it either. Bah!

That plastic squirty cream is probably more my taste....there's no hope for me!

Try meringue frosting, dairy free.

W00t · 01/09/2020 00:27

Thanks anothermansmother I was thinking meringue icing might work.

lakesidesummer · 01/09/2020 00:39

In your case I would use coconut squirty cream, it is really tasty.

W00t · 01/09/2020 06:15

Thanks lakeside do you know if it's available in ordinary supermarkets? Would it be in the freefrom section or dairy/cream?

OP posts:
SenorPeabodyEsq · 01/09/2020 06:46

That 7 minute frosting is actually meringue frosting. It's egg white whipped with sugar, with cream of tartar and vanilla added. It tastes nice but I I have not used it in a roll before and wonder if it would be stiff enough to work?

BakedBeeeen · 01/09/2020 06:54

You can’t use squirty cream! It uses an aerosol to put air into the cream, which sort of “deflates” over several minutes. (And leaves a watery puddly) You can only use to decorate the top of something you are eating immediately. If you squirt some on a plate and leave for 5 mins you will see what I mean! It’s not stable enough to hold a Swiss roll together.

lakesidesummer · 01/09/2020 14:18

Thinking about it, the squirty cream might not work with deflation.
But dairy free squirty cream is usually with the dairy ones in the chillers.

W00t · 01/09/2020 14:57

Mmm, I'm thinking something marshmallowy might be about right. The shop bought Swiss rolls have the filling just right (but the Waitrose one with chocolate buttercream is definitely too rich/sickly).

YetAnotherSpartacus · 01/09/2020 15:02

Didn't it use to be called 'mock cream'?
