Newly vegetarian house guest

I am due to have a teenage newly vegetarian visitor. I love cooking and sometimes make meals without meat but I am at loss what to cook. This young lady will be joining us alongside 5 other adults who all love meat(so do I).
She always had a very restrictive taste in terms of vegetables. She eats broccoli and carrots.. That's pretty much it. Wouldn't try tofu. I have bought her vegetarian steak like product before which she didn't ljke(it looked awful to be honest).
I would really love to make something nice for her, but at loss what can I cook if she doesn't eat mushrooms, aubergines, courgettes butternut squash, cauliflower, sweet potatoes etc. Plus I need to cook for other guests something meaty.
I would appreciate any ideas

Steamed carrots with some honey on top. Broccoli with soy sauce.

With her restrictions on the veg she'll eat, I'd probably do a roast and ask her if she wanted veggie sausages with it or if she'd prefer cauliflower cheese (most veg is better covered in cheese). I'm not sure you're going to be able to make something that everyone else will enjoy that meets her veggie but veg hating requirements

Why not ask her what she wants to eat? No stress then and she is happy.

What did she enjoy before? If she liked sausages the Richmond meat free are lovely and great done as toad in the whole with the veg she likes and gravy.
If she would eat a stir fry with the veg do it with some Oomph pieces or even Quorn nuggets chopped through, rice or noodles and the plant based Elmlea with nutritional yeast masked a very simple coating.
If she liked roasts and everyone else is having one do her either a Quorn Fillet or again a Yorkshire pud if she's not a quorn fan plus veg, same if everyone is having steak etc.
Another thing that I've found goes down surprisingly well with my veg hating 10 year old (suspected Asd) is lentil lasagna which is never have predicted but it has carrots and broccoli in it so might be a success? (I'm a v low dairy veggie and my youngest is part time veggie so these are some things she likes)

I would consider things like pasta bakes/Bolognese/fajitas?

You could do a sausage and tomato/vegetable sauce pasta bake (with bits of mozzarella pushed through it) and then just put veggie sausages in her version.

Same for Bolognese, you can do a meat version and a Quorn version.

Fajitas could be done with onions and peppers and then either Quorn or chicken which is reasonably friendly to non-vegetable lovers.

Agree about the idea of the roast

Toad in the hole might work with a veggie and non veggie option?

Cheese fondue? Baked camembert?

I do a yummy leek and goats cheese pasta sauce that you could add chicken/bacon to for the meat lovers and not for the vegetarian?

There’s lots of things around in the veggie section such as pesto and mozzarella melts, cauliflower cheese grills, bean burgers, veggie sausages etc that I do for DD when the rest of us are having meat. So same potatoe/rice/veg etc but different protein

DD eats lots and it’s of veg though so we do lots of curries/stirftys etc that sound like you veggie might not enjoy.

She is still a fussy child, so I would make something appropriate for such a palate. Macaroni Cheese in a little ramekin with a side of whatever veg/salad everyone else is having?

Paneer tikka masala and rice is lovely but not unless you are doing curries for the other guests. Pizza always a hit. Sounds like she is probably a junk food veggie as dislikes so much so keep it simple.

I make spaghetti carbonara with vivera veggie bacon bits - fry it in lots of olive oil it tastes like bacon. Total winner for meat eaters and veggies that like the taste of meat but not eating animals.

Mexican is great for everyone. Linda McCartney veg balls chopped up and fried popped in a fajita or taco then you can dress your own, separate meat for meat eating guests.

Agree about Richmond sausages, they taste lovely - so toad in the hole is a good idea. Mash veg and yorkie pud.

I would phone her up and ask her for a list of likes and dislikes.
Some ‘safer’ veggie ideas may be
Pizza
Pasta and tomato based sauce with cheese
Macaroni cheese
Jacket potatoes with coleslaw, cheese, beans
Omelette

You could ask her if she eats any of the quorn/meat replacement products. Maybe haloumi or falafel would be acceptable.

I was going to suggest fajitas or tacos. Plonk it all on the table and guests help themselves to the bits they eat. I'd do:

  • lettuce/tomato/grated cheese (there is rennet free cheese, but no idea which ones)
  • plain rice or with black beans or a savoury rice
  • quick fried steak in a fajita mix powder or chicken or both
  • refried beans
  • guacomole
  • jalepenos

I'd just ask her what Mexian things she eats.
