What would you do with a surplus of huge onions?

Store them somewhere cool and eat them,they shouldn't go off in the weeks it takes to eat them.
Or you could make caramelised onion jam,Slice the red ones thinly into salads.Just use everyday and they'll soon be gone.

I would freeze several batches of raw chopped onions for easy dinner prep, and I would do the same with caramelised onions.

Peel and chop then sweat some of them in olive oil with or two carrots and sticks of celery, depending on size. When everything's soft add a clove of two of garlic per onion (or more) and continue cooking gently until everything starts to go golden. Then add a tin or two of tomatoes per onion and some oregano, salt and pepper, a little sugar and whatever other herbs you fancy, simmer it for an hour or so then blend it with a stick blender (or not if you prefer it chunky).

Freeze your tomato sauce ready for a quick meal poured over pasta, or you can add it to meat for a ragu, cook meatballs in it, mix it with pasta and chunks of sausage for a pasta bake and I'm sure there are plenty more.

Red onions go nicely in roasted vegetables.

Onion gravy will let you use a few up in meals that might otherwise not have onions.

Put them into a clean pair of tights tying a knot after each onion is added. Hang them in your garage/shed if you have one. They'll last through winter.

They last ages if you can hang them. I tie a string to the neck and then hang them from a piece of washing line in the garage. The ones that can't be hung I chop and freeze. I occasionally buy a sack of onions and there are only two of us - I still get through them before they go funny.
