Lower calorie versions of white sauce?

I need to lighten up my lasagne and the white sauce is a significant culprit of boosting the calorie content. Any ideas?

Delia does one without butter. Thickened milk then really. I really don’t use much butter in mine anyway so it’s the pasta that is the most calorific. I sometimes layer thinly sliced sweet potatoes instead of the pasta to make it lower calorie.

Holy crap why didn't I think of that? I love potatoes so much and lasagne with potatoes instead of pasta almost sounds better! Thank you very much for that suggestion.

Quark mixed with an egg yolk, a pinch of mustard powder, salt and pepper and sometimes some mature cheddar is a good replacement!

You can use leek layers instead of pasta. Unroll and lay flat. It's not as nice as pasta though.

I don't think i've ever tasted Quark before, just googled it, does it taste sour?

I have tried leeks instead of pasta and it's nice, but it's not lasagne.

Blended cauliflower is very imaginative, is there anything that veg can't do? I imagine it'd be a bit grainy.

If you cook the cauli as per the recipe, once you blend it it goes smooth. It’s very good, I like it a lot.

I recently discovered Heston's cheese sauce, which is made with stock and wine (you could omit the wine) and the cheese is lightly coated in cornflour. It is a bit weird to make, but works well and is tasty.
